Vegan Mac n Cheese *Gluten FREE*

  • 1 box GF macaroni noodles
  • 2 ea. potatoes
  • 4 ea. carrots
  • 1/2 c. cashews (soaked)
  • 1/4 tsp. onion
  • 1/4 tsp. garlic
  • 1/2 c. coconut oil
  • 1 c. non-dairy milk
  • 1/2 c. nutritional yeast
  • 1/2 c. vegan cream cheese (I used Daiya)
  • 1 tsp. salt

Bread Crumb Crust

  • 1/2 c. vegan GF bread crumbs
  • 1/4 c. vegan grated parmesan cheese
  • 1 tbsp. fresh herbs (I used thyme, rosemary, & sage) chopped
  • 2 tbsp. nutritional yeast
  • 1 tbsp. hot sauce
  • 1/4 c. vegan melted butter
  • 1 tsp. salt
  1. Preheat oven to 400 F
  2. Boil pasta according to instructions. Coat in oil and set aside. (This can be done a day a head of time.)
  3. Peel and dice carrots and potatoes. Boil in a pot of water until tender.
  4. Using a high-powered blender add remaining ingredients along with the carrots and potatoes drained. Blend until smooth
  5. Fold cheese sauce into the noodles.
  6. In a mixing bowl mix together the bread crumb ingredients then add to the top of your cheesy mac. 
  7. Bake for 20 - 25 minutes or until crispy on the top. 
  8. Cool for 10 minutes.
