Lentil Loaf


  • 1/2 c. Onion (diced) 
  • 1/4 c. Carrots (diced) 
  • 1/4 c. Celery (diced) 
  • 1 tbsp. Italian seasoning
  • 1 tsp. Onion powder
  • 1 tsp. Garlic powder
  • 1 1/2 tsp. Liquid Smoke
  • 2 tbsp. Ketchup
  • 2 tbsp. Barbecue sauce
  • 2 c. Lentils (cooked and drained) say some liquid 
  • 2 slices Bread (diced and toasted)
  • 1 chia egg ( 1 tsp chia powder + 1 tbsp water *be sure to stir out the lumps)
  • salt and pepper to taste

Method of Preparation

  1. Preheat oven to 375F.
  2. In a medium saucepan saute onions, carrots, and celery until the vegetables sweat. Create chia egg and set aside.
  3. Add all spices, lentils, ketchup, barbecue sauce, and liquid smoke. Mix ingredients until well combined. Taste and adjust seasoning with salt and pepper. If mixture is dry, add lentil liquid, 1 tbsp. At a time.
  4. Mix in chia egg and toasted bread cubes. 
  5. Grease loaf pan. Pack lentil mixture in pan as tight as possible. Be sure not to leave any air filled spaces.
  6. Base the top of the loaf with additional layer barbecue sauce. 
  7. Bake in the oven for 40 min.  
  8. Rest for 10 minutes. Slice and enjoy!!
